Matias Glusman

Matias Glusman is an HoReCa expert with an impressive track record in implementing best practices in Poland. He has inspired and trained a generation of sommeliers and restaurant managers.
Since 2004 he pioneered the wine knowledge training hundreds of sommeliers and restaurant staff.
He is behind the brand building of Cisowianka Perlage and Kropla Beskidu/Delice.
As a leader of the HoReCa Academy in partnership with Coca Cola, he has trained thousands of restaurant staff to increase beverage sales and create perfect bills through his proprietary Perfect Check program. He served as Coca Cola's HoReCa sales director and mentored Myrest in 2018.
Since 2024, he has served as CEO of Myrest, where he and his experienced team are striving to digitize the HoReCa industry, believing that this is the best way to improve the guest experience and increase restaurant profitability. He is also delighted to promote Poland's leading digital tips app for waiters- Tiptip, which was recently incorporated into the Myrest ecosystem.

      According to forecasts, by 2035 the number of employees in Poland will decrease by as much as 2.1 million, and the hotel sector is already facing a growing staff shortage – especially in areas where technology cannot easily replace people. This panel will be a discussion of practical strategies for recruiting and managing personnel in these new realities: how to build and maintain a multicultural team, how to maintain service quality despite rising labor costs, and where technology and AI can genuinely support hotel teams without lowering guest service standards.
